Kiyo Shinoki is a chef, restaurateur, and creative director who has shaped some of New York City’s most beloved Japanese dining experiences for the past 20+ years.
With roots in Japan, he began his culinary journey in Tokyo, quickly rising to the role of executive head chef before relocating to New York in his mid-twenties. From the start, Kiyo was driven by a clear purpose: to connect people and cultures by way of food, and create shared experiences that transcend borders.
Kiyo has built a legacy of quiet influence, redefining how Japanese cuisine is experienced in New York, and paving the way for a generation of restaurants that followed. Through menus, service, and creative presentation, he came to understand that—more than just great food— it’s thoughtful creative direction that shapes a restaurant’s success and cultural resonance.
