Kiyo Shinoki is a chef, restaurateur, and creative director known for shaping some of New York City’s most beloved Japanese dining experiences. Hailing from Japan, he began his culinary journey in Tokyo, quickly rising to the role of executive head chef before relocating to New York in his mid-twenties. From the start, Kiyo was driven by a clear purpose: to create food that brings people together and introduce a new expression of Japanese cuisine in the U.S.
Over the past two decades, Kiyo has built a legacy of quiet influence, helping redefine how Japanese food is experienced in New York—setting a new standard and paving the way for a generation of restaurants that followed. Through menus, service, and creative presentation, he came to understand that—more than just great food— it’s thoughtful creative direction that shapes a restaurant’s success and cultural resonance.
Today, alongside leading his own concepts, Kiyo works as a creative director and trusted advisor to restaurant groups, food brands, and individual chefs, guiding them in building meaningful, enduring culinary experiences. Among his contributions are some of New York’s most beloved spots, including Taku Sando, Takumen, Tonchin, Bar Goto, and Bohemian New York.
